Ingredients

  • – 1 Tablespoon vegetable oil (15 g)
  • – 1 medium onion, diced
  • – 3 cloves garlic, minced
  • – 3 cups chicken broth (720 ml)
  • – 1 can/box cream of chicken soup
  • – 7-8 medium-sized russet potatoes, peeled and chopped into 1-inch cubes (about 1.13 kg of potatoes)
  • – 1 1/2 teaspoons (8 ml) salt (or more/less to taste)
  • – black pepper to taste
  • – 1 cup milk (240 ml)
  • – 1 tablespoon all-purpose flour (8 g)
  • – 2 cups (480 ml) shredded cheddar cheese
  • – 5-6 slices beef bacon, cooked and chopped
  • – sliced green onions
  • – shredded cheddar cheese


Instructions

  1. Pour the vegetable oil into the Instant Pot and activate the sauté function. When the oil is hot, incorporate the diced onions and cook them for 3-4 minutes until they become tender. Add the minced garlic and continue cooking for another minute, stirring often to prevent the garlic from burning.
  2. Introduce the chicken broth, cream of chicken soup, chopped potatoes, salt, and black pepper to the pot and mix thoroughly. Secure the Instant Pot lid and switch the vent valve to the “sealing” position. Set the appliance to cook on manual high pressure for 10 minutes, then perform a quick release of the pressure.
  3. While waiting, combine the milk and all-purpose flour in a small bowl to form a smooth mixture. Keep it ready.
  4. After the pressure has been fully released and the lid’s pin has dropped, remove the lid and blend in the milk-flour mixture. Change the setting to sauté and let the soup cook for an additional 4-5 minutes until it thickens. Gradually add the shredded cheddar cheese, stirring until it completely melts. Serve the soup topped with chopped beef bacon, green onions, and additional cheddar cheese. Enjoy your meal!
