Ingredients
- – 4 apples, peeled/cored (you choose your desired apple)
- – 1 cup (240 ml) sugar
- – 1/2 cup (120 ml) vegetable oil
- – 2 eggs
- – 2 teaspoon vanilla extract
- – 3 cups (360 g) flour
- – 1 tablespoon baking powder
- – 1/2 teaspoon baking soda
- – 1 teaspoon salt
- – 1 tablespoon ground cinnamon
- – 1/2 teaspoon ground nutmeg
Instructions
- Set your oven to 350°F and lightly coat either one large loaf pan or 4-5 smaller ones with oil, depending on your preferred loaf size.
- Use a grater to shred the apples.
- Let the shredded apples rest in a bowl with sugar for around 5 minutes.
- Mix in the vegetable oil, eggs, and vanilla extract with the apples.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Transfer the batter into the greased pan(s).
- Bake in the preheated oven for 30 minutes if you’re making mini loaves, or for 55 minutes for a larger loaf.
- Once baked, take the loaf out of the oven and let it cool for a few minutes before cutting and savoring it.
