Ingredients

  • – 4 apples, peeled/cored (you choose your desired apple)
  • – 1 cup (240 ml) sugar
  • – 1/2 cup (120 ml) vegetable oil
  • – 2 eggs
  • – 2 teaspoon vanilla extract
  • – 3 cups (360 g) flour
  • – 1 tablespoon baking powder
  • – 1/2 teaspoon baking soda
  • – 1 teaspoon salt
  • – 1 tablespoon ground cinnamon
  • – 1/2 teaspoon ground nutmeg


Instructions

  1. Set your oven to 350°F and lightly coat either one large loaf pan or 4-5 smaller ones with oil, depending on your preferred loaf size.
  2. Use a grater to shred the apples.
  3. Let the shredded apples rest in a bowl with sugar for around 5 minutes.
  4. Mix in the vegetable oil, eggs, and vanilla extract with the apples.
  5. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gently fold the dry ingredients into the wet mixture until just combined.
