Description

A heartwarming garlic soup that comforts the soul and boosts the immune system with every spoonful.


Ingredients

  • 2 whole heads of garlic
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 medium potatoes, diced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • ½ cup heavy cream (optional)
  • Crusty bread for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Coat the garlic heads in olive oil and roast on a baking sheet for 35–40 minutes.
  3. In a pot, heat one tablespoon of olive oil and sauté chopped onion until soft and fragrant.
  4. Add diced potatoes, roasted garlic, thyme, smoked paprika, salt, and pepper.
  5. Pour in the broth and simmer for about 20 minutes until potatoes are tender.
  6. Blend the soup until smooth, stirring in cream if desired.
  7. Serve hot with crusty bread.

Notes

Garnish with freshly chopped herbs and adjust seasoning based on taste. Wrap garlic in foil when roasting for added flavor depth.
