Description

Delightful Icelandic almond rolls with a crispy exterior and fluffy interior, perfect for breakfast or as an afternoon snack.


Ingredients

  • 4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 1 cup warm milk
  • 2 large eggs
  • ½ cup unsalted butter, softened
  • 1 teaspoon almond extract
  • ½ cup sliced almonds for topping


Instructions

  1. Mix warm milk with sugar and yeast in a small bowl; let sit for 5 minutes until frothy.
  2. In a large bowl, combine flour and salt. Make a well in the center, then add yeast mixture, eggs, almond extract, and softened butter.
  3. Mix until a dough forms. Knead on a floured surface for 5–7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm area for about 60 minutes, or until doubled in size.
  5. Punch down the dough gently. Roll out into a rectangle (½ inch thick) and cut into squares to shape into rolls.
  6. Place rolls on a baking sheet lined with parchment paper, sprinkle with sliced almonds, and let rise for an additional 30 minutes.
  7. Preheat oven to 375°F. Bake for 20–25 minutes or until golden brown. Enjoy warm or at room temperature.

Notes

For extra flavor, consider adding orange or lemon zest. Serve with jam or butter for an enjoyable treat.
