Ingredients

  • 3 1/2 pounds (1.6 kg) ripe tomatoes (any small- to medium-sized tomatoes will do)
  • 3 tablespoons (45 ml) vegetable oil, divided
  • fine sea salt and freshly-cracked black pepper
  • 1 large white or yellow onion, diced
  • 5 cloves garlic, minced
  • 3/4 teaspoon (4 g) smoked paprika
  • 1/4 teaspoon (1.25 ml) crushed red pepper flakes
  • 2 1/2 cups (600 ml) vegetable broth
  • 1/2 cup (120 ml) loosely-packed fresh basil leaves
  • optional toppings: freshly-grated alternative cheese, drizzle of alternative cream or vegetable oil, croutons, alternative sour cream or fresh basil


Instructions

  1. Preheat your oven to 450°F. Cut the tomatoes into quarters or halves, depending on their size, and place them cut-side-up on a baking tray. Drizzle them with 2 tablespoons of vegetable oil and sprinkle with a bit of salt and black pepper. Roast for 30 to 40 minutes until they become tender, then set the tray on a cooling rack.
  2. In the meantime, warm up the remaining tablespoon of vegetable oil in a large pot over medium-high heat. Toss in the diced onion and cook for about 5 minutes, stirring every so often. Add the minced garlic, smoked paprika, and crushed red pepper flakes, and continue to cook for an additional 2 minutes, stirring often.
  3. Combine the vegetable broth, fresh basil, and the roasted tomatoes (along with their juices) in the pot and mix everything together.
  4. Blend the mixture using an immersion blender until it reaches the smoothness you prefer.
  5. Taste the soup and adjust the seasoning with more salt, pepper, or smoked paprika if necessary.
  6. Serve the soup hot, adding any optional garnishes you like, and enjoy!
