Description

A delightful balance of simplicity and taste, featuring grilled chicken and broccoli with a creamy garlic sauce.


Ingredients

  • 2 medium boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice (or quinoa)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Pinch of paprika (optional)
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 12 tbsp water (to thin)
  • Salt and pepper, to taste


Instructions

  1. Preheat your grill over medium-high heat and season the chicken breasts liberally with salt, pepper, and a pinch of paprika.
  2. Grill the chicken for about 6–7 minutes on each side until cooked through, reaching an internal temperature of 165°F (74°C). Let rest before slicing.
  3. Steam the broccoli in a steamer basket over boiling water for 4–5 minutes until bright green and tender.
  4. Mix together Greek yogurt, light mayonnaise, minced garlic, lemon juice, water, salt, and pepper. Whisk until smooth.
  5. Divide the cooked brown rice among four bowls and top with sliced grilled chicken and steamed broccoli.
  6. Drizzle the creamy garlic sauce over each bowl before serving.

Notes

Marinating the chicken beforehand can enhance its flavor. Adjust the garlic in the sauce as desired.
