- Fresh ears of corn
- Ice water for cooling
- Freezer bags or airtight containers for storage
Instructions
- Select Fresh Corn: Choose ears with bright, green husks and plump kernels.
- Shuck the Corn: Remove the husks and silk from each ear.
- Boil Water: Fill a large pot with water and bring it to a rolling boil.
- Blanch Corn: Carefully add the shucked corn to the boiling water. Blanch for 4-6 minutes.
- Ice Bath: Prepare a bowl of ice water. Transfer the corn into the ice water instantly to halt the cooking process.
- Cool and Drain: After a few minutes, drain the corn well. Pat it dry and cut the kernels off the cob if desired.
- Package for Freezing: Place whole ears or cut kernels into freezer bags or airtight containers. Remove as much air as possible before sealing.
- Label and Freeze: Label the bags with the date and contents. Place them in the freezer, ensuring they are flat for optimal storage.
Notes
To minimize waste, consider portioning corn into meal-sized servings before freezing. For best results, store opened bags in the freezer and use within 8-12 months.
