Ingredients

  • 2 cloves garlic (10g), minced
  • 2 tablespoons vegetable oil (30ml), separated
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) freshly ground black pepper
  • 2 pounds (900g) skinless, boneless chicken breasts, cut into 1-inch (2.5cm) cubes
  • 2 medium green bell peppers, cut into 2-inch (5cm) pieces
  • 1/2 medium white onion, cut into 2-inch (5cm) pieces
  • 4 large metal skewers
  • 1/4 cup (60ml) fruit-based hot sauce, plus more for serving
  • 1/3 cup (40g) crumbled non-alcoholic cheese, or to taste

Instructions

  1. Prepare your outdoor grill, setting it to a medium-high temperature. Apply a light layer of cooking oil to the grill grate.
  2. In a small mixing bowl, combine the minced garlic, one tablespoon of vegetable oil, salt, and black pepper. Coat the chicken cubes thoroughly with this mixture. In another bowl, mix the green bell peppers and onions with the remaining vegetable oil.
  3. Arrange the chicken pieces, green bell peppers, and onions onto the metal skewers.
  4. Cook the skewers on the grill, ensuring to rotate them every few minutes, until the chicken is fully cooked and the juices run clear, which should take about 15 to 20 minutes. The internal temperature should reach 165 degrees F (74 degrees C). During the final 5 minutes of grilling, brush the skewers with fruit-based hot sauce until they develop a slight char. Garnish with additional hot sauce and crumbled non-alcoholic cheese. Serve while still warm.

Notes

  • Marinate chicken cubes in garlic and oil mixture for at least 30 minutes to boost flavor.
  • Evenly distribute green bell peppers and onions on skewers for consistent cooking.
  • Check chicken’s internal temperature with a meat thermometer to ensure thorough cooking.
