Ingredients
- – 1/3 cup (80 ml) vegetable oil
- – 1/4 cup (60 ml) honey
- – 4 cloves garlic, large, crushed
- – 2 limes, juiced
- – 2 1/2 pounds (1.2 kg) side of salmon
- – sea salt, to taste
- – cracked pepper, to taste, optional
- – lime slices, to serve
- – 1/4 cup (15 g) fresh chopped parsley, divided
Instructions
- Place an oven rack in the center position and set the oven to 375°F (190°C) to preheat. Cover a baking tray with a large sheet of foil, or use two overlapping pieces if the salmon is particularly wide.
- In a small pot, gently heat the vegetable oil over low to medium heat. Stir in the honey, crushed garlic, and lime juice, whisking until the honey fully blends with the oil and everything is integrated smoothly.
- Position the salmon on the prepared baking tray. Pour the honey-lime concoction evenly over the top of the fish. Season generously with sea salt (approximately 2 teaspoons), add cracked pepper if desired, and sprinkle 2 tablespoons of the chopped parsley over it. Fold the edges of the foil up around the salmon to contain the sauce beneath the fillet.
- Bake until the salmon is thoroughly cooked (usually around 15-18 minutes, depending on the thickness and your preferred level of doneness). Afterwards, switch the oven to broil (or grill) mode for 2-3 minutes on medium heat to achieve a caramelized surface. Decorate with the remaining parsley and serve right away with slices of fresh lime.
