Ingredients

  • 2 large sweet potatoes (500g) peeled and cubed
  • 1 large yellow onion (150g) sliced
  • 3 cloves garlic (15g) chopped
  • 2-3 tablespoons (30-45ml) vegetable oil
  • 1-2 teaspoons (5-10g) seasoning of choice
  • 16 oz. (450g) beef sausage cut into 1-inch slices – such as beef sausage, chicken sausage, etc.


Instructions

  1. Set your oven to 425 degrees F.
  2. Place the sweet potato cubes, onion slices, and chopped garlic on a baking tray. Pour the vegetable oil over them and sprinkle with your chosen seasoning. Mix well to ensure everything is coated, then spread them out evenly.
  3. Bake the mixture of sweet potatoes, onions, and garlic for 20 minutes. Take out the tray, give everything a mix, re-distribute evenly, and return to the oven for an additional 15 minutes. Once again, take out the tray, stir using a metal spatula if you prefer, and spread everything out evenly.
  4. Arrange the sausage slices on the tray, positioning them between the sweet potatoes, ensuring one of the cut sides touches the hot tray.
  5. Continue baking for another 10 minutes until the sausage is nicely browned. Enjoy your meal.
