Ingredients
- 3 cups canned hominy, rinsed and drained
- 1 cup sour cream
- 1/4 cup diced jalapeños, canned
- 2 cups shredded Monterey Jack cheese
- 1/2 cup grated parmesan cheese
Instructions
- Preheat the oven to 350°F (180ºC).
- In a medium-sized bowl, combine the hominy, sour cream, jalapeños, and Monterey Jack cheese.
- Spread the mixture evenly into a greased 2-quart casserole dish.
- Top with Parmesan cheese.
- Bake for 1 hour or until golden and bubbly.
Notes
Let the casserole rest for a few minutes after baking for easier serving. Consider adding fresh herbs for garnish.
