  • – 200g rice vermicelli noodles
  • – Salt and pepper to taste
  • – 1 tablespoon (15 ml) vegetable oil
  • – 1-2 cups (240-480ml) water
  • – Fresh chopped parsley
  • – Cracked black pepper
  • – Sriracha or chili to taste


Instructions

  1. Begin by preparing the vegetables. Dice the onion, carrots, bok choy, and zucchini into uniform small cubes. Mince the garlic cloves into tiny pieces.
  2. In a pot, heat the vegetable oil and cook the onions for a few minutes until they become see-through. Add the minced garlic and continue to cook for another minute.
  3. Incorporate the diced carrots and zucchini into the pot and stir everything together for a few more minutes.
  4. Pour in the vegetable stock and soy sauce, then season with salt and pepper. Add 1-2 cups of water, based on how much broth you desire. Cover the pot and let it simmer on medium heat.
  5. After 10-15 minutes, check the vegetables to ensure they are tender. Then, introduce the baby bok choy and rice vermicelli noodles. They will be ready in just 1-2 minutes.
