- – 1-2 cups (240-480ml) water
- – Fresh chopped parsley
- – Cracked black pepper
- – Sriracha or chili to taste
Instructions
- Begin by preparing the vegetables. Dice the onion, carrots, bok choy, and zucchini into uniform small cubes. Mince the garlic cloves into tiny pieces.
- In a pot, heat the vegetable oil and cook the onions for a few minutes until they become see-through. Add the minced garlic and continue to cook for another minute.
- Incorporate the diced carrots and zucchini into the pot and stir everything together for a few more minutes.
- Pour in the vegetable stock and soy sauce, then season with salt and pepper. Add 1-2 cups of water, based on how much broth you desire. Cover the pot and let it simmer on medium heat.
- After 10-15 minutes, check the vegetables to ensure they are tender. Then, introduce the baby bok choy and rice vermicelli noodles. They will be ready in just 1-2 minutes.
