Description
A comforting bowl of homemade ravioli soup filled with cheese ravioli, Italian sausage, fresh spinach, and rich chicken broth.
Ingredients
- 1 package of cheese ravioli
- 1 pound Italian sausage
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- Olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic; sauté until the onion is soft and translucent.
- Add Italian sausage, breaking it up into smaller pieces, and cook until browned.
- Pour in chicken broth and add diced tomatoes; bring to a gentle simmer.
- Add cheese ravioli and cook according to package instructions.
- Stir in spinach until wilted; season with salt and pepper to taste.
- Serve hot, garnished with freshly grated Parmesan cheese.
Notes
Add a pinch of red pepper flakes for heat or fresh herbs for garnish. Store leftovers in an airtight container in the fridge for up to three days.
