Description

A comforting bowl of homemade ravioli soup filled with cheese ravioli, Italian sausage, fresh spinach, and rich chicken broth.


Ingredients

  • 1 package of cheese ravioli
  • 1 pound Italian sausage
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic; sauté until the onion is soft and translucent.
  3. Add Italian sausage, breaking it up into smaller pieces, and cook until browned.
  4. Pour in chicken broth and add diced tomatoes; bring to a gentle simmer.
  5. Add cheese ravioli and cook according to package instructions.
  6. Stir in spinach until wilted; season with salt and pepper to taste.
  7. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Add a pinch of red pepper flakes for heat or fresh herbs for garnish. Store leftovers in an airtight container in the fridge for up to three days.
