Description

Delicious peach cobbler muffins bursting with flavor, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced fresh peaches (or canned peaches)
  • 1/2 cup brown sugar
  • 1/2 cup crumbled cinnamon streusel topping


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. Mix flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  3. Whisk together melted butter, eggs, milk, and vanilla in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the peaches gently.
  5. Fill each muffin cup halfway with batter and sprinkle with brown sugar and cinnamon streusel topping.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool slightly before removing from the tin. Serve warm.

Notes

Use fresh peaches for best flavor, drain canned peaches well. Consider adding lemon zest for brightness.
