Delicious peach cobbler muffins bursting with flavor, perfect for breakfast or a snack.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups peeled and diced fresh peaches (or canned peaches)
- 1/2 cup brown sugar
- 1/2 cup crumbled cinnamon streusel topping
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin.
- Mix flour, sugar, baking powder, salt, and cinnamon in a large bowl.
- Whisk together melted butter, eggs, milk, and vanilla in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the peaches gently.
- Fill each muffin cup halfway with batter and sprinkle with brown sugar and cinnamon streusel topping.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool slightly before removing from the tin. Serve warm.
Notes
Use fresh peaches for best flavor, drain canned peaches well. Consider adding lemon zest for brightness.
