Description

Create your own homemade pancake mix for fluffy pancakes that evoke cozy memories of Sunday mornings.


Ingredients

  • 4 1/2 cups all-purpose flour
  • Heaping 1/4 cup granulated sugar
  • 3 tablespoons + 2 teaspoons baking powder
  • 1 1/2 teaspoons fine sea salt
  • Cooking spray
  • 2 large eggs
  • 1 1/4 cups milk or water
  • 1/4 cup unsalted butter (melted and slightly cooled) or canola/vegetable oil
  • 1 3/4 cups pancake mix


Instructions

  1. Melt the unsalted butter in a small saucepan or microwave and let it cool slightly.
  2. In a separate bowl, crack the two large eggs and whisk them lightly.
  3. Measure out 1 1/4 cups of milk (or water) and add to the bowl with the eggs.
  4. Pour in the melted butter and blend everything until well combined.
  5. Measure out 1 3/4 cups of homemade pancake mix in another bowl.
  6. Gently fold the wet ingredients into the dry ingredients, mixing until just combined.
  7. Heat a non-stick skillet over medium heat and coat it lightly with cooking spray.
  8. Pour about 1/4 cup of batter onto the skillet. Cook until bubbles appear, then flip and cook until golden brown.

Notes

For extra fluffy pancakes, separate the egg whites and yolks, whipping the egg whites to soft peaks before folding them into the batter.
