Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup sugar to roll the cookie dough in
  • 1/4 cup unsalted butter (for filling, softened)
  • 1/2 cup creamy peanut butter (for filling)
  • 1 1/2 cups powdered sugar (for filling)
  • 2 tablespoons milk (for filling)
  • 1/4 teaspoon vanilla extract (for filling)


Instructions

  1. In a bowl, mix the flour, baking soda, and salt; set aside.
  2. Cream together the softened butter, light brown sugar, and creamy peanut butter until fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually stir in the dry ingredients until blended.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat oven to 350°F (175°C).
  7. Scoop tablespoon-sized portions, roll them into balls, and coat with sugar.
  8. Place on baking sheets and flatten slightly with a fork.
  9. Bake for 10-12 minutes or until edges are golden brown.
  10. Let cookies cool on baking sheets for a few minutes, then transfer to wire racks.
  11. For the filling, mix together softened butter and peanut butter until smooth.
  12. Add powdered sugar, mixing until creamy, and adjust with milk if needed.
  13. Once cookies are cool, spread the filling between two cookies to make sandwiches.
