- 1/4 cup unsalted butter (for filling, softened)
- 1/2 cup creamy peanut butter (for filling)
- 1 1/2 cups powdered sugar (for filling)
- 2 tablespoons milk (for filling)
- 1/4 teaspoon vanilla extract (for filling)
Instructions
- In a bowl, mix the flour, baking soda, and salt; set aside.
- Cream together the softened butter, light brown sugar, and creamy peanut butter until fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually stir in the dry ingredients until blended.
- Chill the dough in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Scoop tablespoon-sized portions, roll them into balls, and coat with sugar.
- Place on baking sheets and flatten slightly with a fork.
- Bake for 10-12 minutes or until edges are golden brown.
- Let cookies cool on baking sheets for a few minutes, then transfer to wire racks.
- For the filling, mix together softened butter and peanut butter until smooth.
- Add powdered sugar, mixing until creamy, and adjust with milk if needed.
- Once cookies are cool, spread the filling between two cookies to make sandwiches.
