Ingredients
- – 1 tbsp (15 ml) sesame oil
- – 2 cloves garlic, minced
- – 2 tsp (10 g) freshly grated ginger
- – 1/2 cup (120 ml) shredded carrots
- – 1/2 cup (120 ml) shiitake mushrooms, sliced (optional)
- – 4 cups (960 ml) vegetable broth
- – 1 tbsp (15 ml) rice vinegar
- – 3 tbsp (45 ml) soy sauce (more to taste)
- – 1 tbsp (15 ml) hot sauce (more or less, depending on your heat tolerance)
- – 23 oz (650 g) portions of Ramen noodles (discard the flavor packets)
- – Sliced scallions
- – Sesame seeds
- – Shredded carrots
- – Soft-boiled egg
Instructions
- Warm the sesame oil in a medium to large pot over medium heat.
- Introduce the minced garlic and grated ginger, allowing them to cook gently until their aroma is released, which should take about 2 to 3 minutes. Be cautious not to let the garlic turn brown to prevent a bitter taste.
- Incorporate the shredded carrots and sliced shiitake mushrooms if using, and continue to cook them until they become tender, stirring often, for roughly one minute.
- Pour in the vegetable broth, along with the hot sauce, rice vinegar, and soy sauce. Mix everything together and allow the mixture to come to a gentle simmer for approximately five minutes. Taste the broth and modify the spice level and seasoning by adding more hot sauce and soy sauce if desired.
- While the broth is simmering, prepare the Ramen noodles in a different pot according to the package’s directions. It is advisable not to cook them directly in the broth to avoid them absorbing too much liquid and to keep the transfer to the bowl clean. Once the noodles are cooked to your liking, drain them, rinse with cold water, and place them in a soup bowl, setting them aside for later.
- When the broth is done, ladle it over the noodles in the bowl. Let it cool slightly. If you’re adding a soft-boiled egg as a garnish, prepare it now and add any additional toppings before serving.
- In a small pot, bring water to a boil.
- Gently add the egg(s) and boil for five minutes. Meanwhile, fill a bowl with ice water.
- After the boiling time, remove the egg(s) and place them in the ice water for about a minute to cool them enough to handle. Then, gently crack the shell and roll the egg on a flat surface to peel it. Cut the egg in half and position it on top of your Ramen dish.

- For a vegetarian option, skip the optional shiitake mushrooms and use vegetable broth for a flavorful base.
