Description

Delightful homemade treats combining peanut butter and chocolate, reminiscent of childhood flavors but with a healthier twist.

Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 tablespoon coconut oil

Instructions

  1. Combine the peanut butter, coconut flour, and maple syrup in a medium-sized mixing bowl until smooth.
  2. Form the mixture into egg shapes by rolling one-inch balls and flattening them into ovals.
  3. Place the ovals on parchment paper on a cookie sheet and freeze for 30 minutes.
  4. Heat the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until melted.
  5. Coat each peanut butter egg in melted chocolate using two forks, letting excess chocolate drip off.
  6. Transfer the coated eggs back to the parchment paper to harden.
  7. Optional: Drizzle with more melted chocolate for decoration.
  8. Refrigerate until ready to serve.

Notes

For added flavor, consider mixing in vanilla or a sprinkle of cinnamon with the peanut butter mixture.
