Ingredients
- 1 pound ground beef (80% lean)
- 2 cups elbow macaroni (about 8 oz)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cups beef broth
- 1 cup whole milk
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Set a large skillet or sauté pan over medium-high heat.
- Add the ground beef and cook until browned, about 5 minutes.
- Stir in the onion and garlic, then add the tomato paste, paprika, oregano, salt, and pepper.
- Pour in the beef broth and milk, scraping the bottom of the skillet to release flavor-packed bits.
- Add the uncooked macaroni, stirring well to ensure the pasta is mostly submerged.
- Bring to a boil, then reduce heat and simmer covered for 12-15 minutes, stirring occasionally.
- Remove from heat and gradually stir in shredded cheese until melted and creamy.
- Spoon into bowls, garnish with parsley if desired, and serve hot.
