Description

A rich, cheesy, and flavorful version of the classic Hamburger Helper, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef (lean or 80/20)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups beef broth
  • 1 ½ cups milk (whole or 2%)
  • 2 cups elbow macaroni (or short pasta)
  • 2 tbsp tomato paste
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp chili powder (optional)
  • 1 cup shredded cheddar cheese
  • Salt and pepper (to taste)
  • ½ cup peas (or spinach or chopped bell peppers)
  • Pinch cayenne pepper (or red pepper flakes)
  • Fresh parsley (for garnish)


Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Stir in the diced onion and minced garlic, cooking until the onion softens (about 3-4 minutes).
  3. Add tomato paste, Dijon mustard, smoked paprika, chili powder, and cayenne. Mix to combine.
  4. Pour in beef broth and milk, stirring to combine. Bring to a gentle boil.
  5. Add elbow macaroni, reduce heat, and let simmer for about 10-12 minutes until pasta is tender.
  6. Remove from heat, stir in shredded cheddar cheese until melted and creamy. Add peas, spinach, or bell peppers.
  7. Garnish with parsley before serving.

Notes

For a vegetarian option, substitute ground beef with lentils or plant-based ground meat. Add cream cheese for extra richness.
