A rich, cheesy, and flavorful version of the classic Hamburger Helper, perfect for busy weeknights.
Ingredients
- 1 lb ground beef (lean or 80/20)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 2 cups beef broth
- 1 ½ cups milk (whole or 2%)
- 2 cups elbow macaroni (or short pasta)
- 2 tbsp tomato paste
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- ½ tsp chili powder (optional)
- 1 cup shredded cheddar cheese
- Salt and pepper (to taste)
- ½ cup peas (or spinach or chopped bell peppers)
- Pinch cayenne pepper (or red pepper flakes)
- Fresh parsley (for garnish)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Stir in the diced onion and minced garlic, cooking until the onion softens (about 3-4 minutes).
- Add tomato paste, Dijon mustard, smoked paprika, chili powder, and cayenne. Mix to combine.
- Pour in beef broth and milk, stirring to combine. Bring to a gentle boil.
- Add elbow macaroni, reduce heat, and let simmer for about 10-12 minutes until pasta is tender.
- Remove from heat, stir in shredded cheddar cheese until melted and creamy. Add peas, spinach, or bell peppers.
- Garnish with parsley before serving.
Notes
For a vegetarian option, substitute ground beef with lentils or plant-based ground meat. Add cream cheese for extra richness.
