Description

Delicious and nutritious blueberry protein muffins that are perfect for breakfast or a snack, packed with flavor and protein.


Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder


Instructions

  1. Preheat the oven to 360°F (180°C).
  2. In a large mixing bowl, whisk together the egg, honey, Greek yogurt, vanilla extract, and olive oil until smooth.
  3. Gently mix the plain flour, vanilla-flavored protein powder, baking powder, and baking soda into the wet ingredients until just combined.
  4. Fold in the fresh blueberries carefully to avoid crushing them.
  5. Spoon the batter into a lined muffin pan, filling each cup evenly to make about 12 muffins.
  6. Bake for 15-20 minutes until a toothpick inserted comes out clean.
  7. Let the muffins cool slightly in the pan before transferring to a wire rack.
