Ingredients
- 3 pounds (1361 g) (6–8 medium) baking apples
- 2 tablespoons (30 ml) lemon juice
- ½ cup (100 g) packed light brown sugar
- ¼ cup (50 g) granulated sugar
- ¼ cup (55 g) vegetable oil
- ¼ cup (60 ml) water plus 2 tablespoons
- 2 teaspoons (10 ml) vanilla extract
- 1 ½ teaspoon (7.5 ml) ground cinnamon
- 1 Pinch of salt
- 2 tablespoons (16 g) cornstarch
Instructions
- Peel, remove cores, and slice the apples thinly. Mix them with lemon juice in a bowl and let them sit to release moisture.
- In a large saucepan on medium heat, combine the brown sugar, granulated sugar, vegetable oil, vanilla extract, cinnamon, salt, and ¼ cup of water until melted.
- Add the apple slices to the mixture. Cover the pan and cook, stirring from time to time, for 4 to 6 minutes.
- In a small bowl, combine 2 tablespoons of water with cornstarch. Pour this mixture into the pan, stirring continuously, and cook until the mixture thickens, approximately 1 more minute.
- Take the pan off the heat and allow it to cool slightly before using the filling in a pie, preserving, or serving it over ice cream.
Notes
- Slice apples thinly and toss with lemon juice to prevent browning and excess moisture.
- Stir apple mixture while cooking for even flavor distribution and to prevent sticking.
