Ingredients

  • 3 pounds (1361 g) (68 medium) baking apples
  • 2 tablespoons (30 ml) lemon juice
  • ½ cup (100 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • ¼ cup (55 g) vegetable oil
  • ¼ cup (60 ml) water plus 2 tablespoons
  • 2 teaspoons (10 ml) vanilla extract
  • 1 ½ teaspoon (7.5 ml) ground cinnamon
  • 1 Pinch of salt
  • 2 tablespoons (16 g) cornstarch


Instructions

  1. Peel, remove cores, and slice the apples thinly. Mix them with lemon juice in a bowl and let them sit to release moisture.
  2. In a large saucepan on medium heat, combine the brown sugar, granulated sugar, vegetable oil, vanilla extract, cinnamon, salt, and ¼ cup of water until melted.
  3. Add the apple slices to the mixture. Cover the pan and cook, stirring from time to time, for 4 to 6 minutes.
  4. In a small bowl, combine 2 tablespoons of water with cornstarch. Pour this mixture into the pan, stirring continuously, and cook until the mixture thickens, approximately 1 more minute.
  5. Take the pan off the heat and allow it to cool slightly before using the filling in a pie, preserving, or serving it over ice cream.

  • Slice apples thinly and toss with lemon juice to prevent browning and excess moisture.
