Ingredients
- 2 Tablespoons (28g) unsalted butter
- 8 cups (about 1kg) peeled and sliced apples* (1/4-inch slices; about 7 apples)
- 3 Tablespoons (37g) packed light or dark brown sugar
- 1 Tablespoon (15 ml) fresh squeezed lemon juice
- 1 Tablespoon (15 ml) all-purpose flour
- 1 and 1/2 teaspoons (3 ml) ground cinnamon
- 1/4 teaspoon (1 ml) ground allspice
- 1/4 teaspoon (1 ml) ground nutmeg
- 6 Tablespoons (85g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1 cup (240ml) beef milk*
- 2 teaspoons (10 ml) pure vanilla extract
- 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled)
- 2 teaspoons (10 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- optional: 1 Tablespoon (15 ml) granulated sugar + 1/2 teaspoon (3 ml) cinnamon, for sprinkling
Instructions
- Set your oven to 350°F (177°C) and lightly coat a 9×13-inch baking dish, or a similar-sized dish, with a non-stick spray.
- Prepare the apples: Heat 2 tablespoons of butter in a medium-sized pot over medium heat. Add the sliced apples, brown sugar, lemon juice, flour, and spices. Stir frequently for about 5 minutes until the apples are evenly coated and just starting to soften. Move the apple mixture to the greased baking dish.
- Create the topping: In a medium bowl, combine the melted butter and sugar using a whisk. Mix in the milk, vanilla, flour, baking powder, and salt until the mixture is mostly smooth, though a few small lumps are acceptable. Pour and distribute this batter over the apple layer. Evenly sprinkle a mixture of cinnamon and sugar on top. Use a butter knife to gently swirl through the topping, though the apples may make it a bit challenging.
- Place the dish on the middle shelf of the oven and bake for 48-55 minutes, or until the top is a golden color and the edges are bubbling. If the top browns too fast, cover it loosely with aluminum foil halfway through baking. Once done, take it out and let it cool on a rack for at least 5 minutes before enjoying.
- Enjoy it warm, at room temperature, or chilled; either alone or with a scoop of vanilla ice cream or a drizzle of salted caramel sauce.
- Keep any remaining cobbler in an airtight container in the fridge for up to 5 days. Warm up leftovers in the microwave or bake them covered in a 300°F (149°C) oven for about 20 minutes until hot.
