Description

A hearty and comforting casserole that combines ground beef, potatoes, mixed vegetables, and creamy mushroom soup, topped with gooey cheese for a delightful family meal.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (like green beans and corn)
  • 1 onion, chopped
  • 2 cups shredded cheese (like cheddar or mozzarella)
  • 1 can (10.5 oz) cream of mushroom soup
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat and cook the ground beef until browned. Drain excess fat.
  3. Add chopped onion and mixed vegetables to the skillet, cooking until vegetables are tender.
  4. Combine the diced potatoes, cooked beef mixture, cream of mushroom soup, salt, and pepper in a large bowl.
  5. Stir well and transfer the mixture to a greased baking dish.
  6. Top with shredded cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  9. Let cool slightly before serving.

Notes

You can customize the vegetables or cheese based on your family’s preferences. Consider adding crunchy toppings like breadcrumbs for extra texture.
