Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 2 cups mixed vegetables (like green beans and corn)
- 1 onion, chopped
- 2 cups shredded cheese (like cheddar or mozzarella)
- 1 can (10.5 oz) cream of mushroom soup
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat and cook the ground beef until browned. Drain excess fat.
- Add chopped onion and mixed vegetables to the skillet, cooking until vegetables are tender.
- Combine the diced potatoes, cooked beef mixture, cream of mushroom soup, salt, and pepper in a large bowl.
- Stir well and transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Cover with foil and bake for 30 minutes.
