Description

A nourishing and delicious high protein soup combining white beans, fresh veggies, and bold spices, perfect for chilly weather.


Ingredients

  • 2 cups canned white beans, rinsed and drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups kale, chopped
  • Juice of half a lemon


Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, and diced celery; sauté for 5-7 minutes until tender.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Incorporate the rinsed white beans, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Add the chopped kale and cook for another 5 minutes until wilted.
  7. Remove from heat and stir in the lemon juice.
  8. Serve hot, optionally garnished with herbs.

Notes

For varied texture, slightly mash some beans while cooking or blend half for a smoother finish. Adjust seasoning as desired.
