A nourishing and delicious high protein soup combining white beans, fresh veggies, and bold spices, perfect for chilly weather.
Ingredients
- 2 cups canned white beans, rinsed and drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups kale, chopped
- Juice of half a lemon
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the chopped onion, diced carrots, and diced celery; sauté for 5-7 minutes until tender.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Incorporate the rinsed white beans, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.
- Reduce heat and let it simmer for 15 minutes.
- Add the chopped kale and cook for another 5 minutes until wilted.
- Remove from heat and stir in the lemon juice.
- Serve hot, optionally garnished with herbs.
Notes
For varied texture, slightly mash some beans while cooking or blend half for a smoother finish. Adjust seasoning as desired.
