Ingredients

  • – 3 pounds (1.4 kg) beef sirloin steak, cut into bite-sized pieces
  • – 2 teaspoons (10 ml) kosher salt
  • – 1 teaspoon (5 ml) black pepper
  • – 1 tablespoon (15 ml) vegetable oil (you may need more)
  • – 1 small sweet onion, thinly sliced
  • – 3 cloves garlic, thinly sliced
  • – 1 cup (240 ml) unsalted beef stock
  • – 1 ounce (28 g) packet au jus gravy mix
  • – 4 tablespoons (60 ml) unsalted butter, thinly sliced


Instructions

  1. Place the bite-sized pieces of sirloin steak into a large mixing bowl. Add the kosher salt and black pepper, then mix well to ensure the seasoning is evenly distributed.
  2. Heat a large skillet over medium-high heat and pour in the vegetable oil. Once the oil is very hot, brown the steak pieces in batches, ensuring they develop a nice color. You’re not cooking them through, just searing the outside. Add more oil if necessary.
  3. Transfer the seared steak pieces into a 6-quart slow cooker. Add the thinly sliced sweet onion and garlic, and gently mix them together.
  4. Pour the unsalted beef stock over the mixture in the slow cooker. Evenly distribute the au jus gravy mix over the top. Arrange the thin slices of unsalted butter over everything.
  5. With the slow cooker covered, cook on high for 3 to 4 hours or on low for 6 to 8 hours. Stir the contents once every hour if possible.
  6. Serve the beef bites with your choice of mashed potatoes, egg noodles, or rice.
