Description
A healthy and delicious alternative to traditional pancakes, packed with protein from eggs and protein powder, and naturally sweetened by ripe bananas.
Ingredients
- 2 eggs
- 1 ripe banana
- 1/2 cup protein powder
Instructions
- In a mixing bowl, mash the banana until smooth.
- Add the eggs and protein powder, and mix until well combined.
- Heat a non-stick skillet over medium heat and pour about 1/4 cup of the batter for each pancake.
- Cook for 2-3 minutes on one side or until bubbles form, then flip and cook for another 2-3 minutes.
- Serve warm.
Notes
For fluffier pancakes, separate egg whites and yolks, whip egg whites, and fold them into the batter. Allow batter to rest for a few minutes before cooking for best results.
