Description

Delicious mini muffins packed with protein from pancake mix and sausage, perfect for breakfast or a snack.


Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)


Instructions

  1. Preheat the oven to 400°F (200°C) and spray a mini muffin tin.
  2. Whisk together the pancake mix, milk, eggs, and maple syrup in a mixing bowl until smooth.
  3. Fold in the cooked sausage and shredded cheese to create the batter.
  4. Fill each muffin cup ¾ full with the batter.
  5. Bake for 15 minutes or until golden brown and firm.
  6. Allow the muffins to cool for a few minutes before serving.
