A flavorful dish combining high protein creamy Cajun chicken with garlic-infused rice, perfect for family gatherings.
Ingredients
- 2 Chicken Breasts
- 1 cup White Rice
- 2 cups Chicken Broth
- 1 tablespoon Cajun Seasoning
- 1 cup Heavy Cream or Greek Yogurt
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- Salt and Pepper, to taste
- Chopped Parsley, for garnish
Instructions
- In a saucepan, heat olive oil over medium heat. Season chicken breasts with Cajun seasoning, salt, and pepper.
- Cook chicken for about 5-7 minutes on each side until fully cooked. Remove from pan and let rest.
- In the same saucepan, add minced garlic and sauté for 1 minute.
- Add rice and stir to coat in garlic oil. Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked.
- Stir in heavy cream or Greek yogurt until creamy.
- Slice the chicken and place it on top of the garlic rice.
- Garnish with chopped parsley and serve.
Notes
For more intense flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. Using Greek yogurt instead of heavy cream lowers the calorie count.
