Description

A flavorful dish combining high protein creamy Cajun chicken with garlic-infused rice, perfect for family gatherings.


Ingredients

  • 2 Chicken Breasts
  • 1 cup White Rice
  • 2 cups Chicken Broth
  • 1 tablespoon Cajun Seasoning
  • 1 cup Heavy Cream or Greek Yogurt
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • Salt and Pepper, to taste
  • Chopped Parsley, for garnish


Instructions

  1. In a saucepan, heat olive oil over medium heat. Season chicken breasts with Cajun seasoning, salt, and pepper.
  2. Cook chicken for about 5-7 minutes on each side until fully cooked. Remove from pan and let rest.
  3. In the same saucepan, add minced garlic and sauté for 1 minute.
  4. Add rice and stir to coat in garlic oil. Pour in chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked.
  6. Stir in heavy cream or Greek yogurt until creamy.
  7. Slice the chicken and place it on top of the garlic rice.
  8. Garnish with chopped parsley and serve.

Notes

For more intense flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. Using Greek yogurt instead of heavy cream lowers the calorie count.
