A simple yet satisfying creamy beef pasta that is high in protein and perfect for quick weeknight dinners.
Ingredients
- 1 lb lean ground beef
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 can tomatoes with juices (14.5 oz)
- 1 cup low-sodium beef broth
- 8 oz penne pasta (or other short pasta)
- 1 tbsp Italian seasoning
- Salt and pepper (to taste)
- 1 tbsp olive oil
- ½ cup plain Greek yogurt
- ¼ cup grated parmesan cheese
- Fresh basil or parsley (for garnish)
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Brown the Beef: In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until soft. Next, add the ground beef, seasoning with salt and pepper. Cook until the meat is browned and fully cooked.
- Simmer the Sauce: Stir in the tomatoes with their juices, beef broth, and Italian seasoning. Let the mixture simmer on low heat for about 10 minutes, allowing the flavors to develop.
- Add the Creamy Element: Remove the skillet from heat, then stir in the Greek yogurt and grated parmesan cheese.
- Combine with Pasta: Toss the cooked pasta into the skillet, mixing thoroughly to coat each piece with the creamy sauce.
- Garnish & Serve: Serve the creamy beef pasta in bowls, garnished with freshly chopped basil or parsley.
Notes
For a chunkier sauce, use diced tomatoes instead. Adding red pepper flakes can give the dish a nice heat.
