A creamy and nutritious queso made with cottage cheese, perfect for dipping or drizzling.
Ingredients
- 1 cup 2% cottage cheese
- 1 tablespoon low sodium taco seasoning
- ¼ cup shredded pepper jack cheese
- 1 tablespoon pickled jalapeños (about 2 jalapeño slices)
- 1 tablespoon water (optional, for blending)
- Pico de gallo, chopped tomatoes, diced peppers, onion, and cilantro for topping
Instructions
- Add the cottage cheese, taco seasoning, shredded pepper jack cheese, and pickled jalapeños into a high-powered blender or food processor.
- Blend the mixture on high until smooth. If the consistency is too thick, add 1 tablespoon of water to help with blending.
- Pour the blended cottage cheese into a microwave-safe dish. Microwave in increments of 30 seconds for a total of 1 minute, or until warm.
- Remove from the microwave and stir well.
- Top with pico de gallo, diced tomatoes, peppers, onions, and cilantro if desired.
Notes
For best results, serve warm. Store leftovers in an airtight container and refrigerate for up to three days. Reheat in the microwave, adding water if needed.
