- 2 tsp taco seasoning
- 5 oz cottage cheese (Good Culture recommended)
- 5 cherry tomatoes (halved)
- 0.75 tsp pickled jalapeños (finely minced)
- 3 tbsp shredded cheese
- 0.25 tsp onion powder
- 1.5 tsp fresh cilantro (chopped)
- 1 pinch Tajin (optional)
- Sturdy tortilla chips (for serving)
Instructions
- Start by cutting the chicken into 1/2-inch cubes and placing it in a microwave-safe bowl along with the salsa and taco seasoning. Microwave for 1-2 minutes until the chicken is thoroughly cooked, stirring halfway through if necessary.
- Meanwhile, combine the cottage cheese, halved cherry tomatoes, finely minced pickled jalapeños, and onion powder in a blender. Blend until you reach a smooth, dip-like consistency.
- Pour the blended cottage cheese mixture into a microwave-safe bowl and stir in the shredded cheese. Microwave for 1 minute, stirring halfway through to ensure even heating.
- Transfer the warm cheese dip into a serving bowl and top it with the cooked chicken mixture. Garnish with fresh cilantro, a sprinkle of additional cheese, and a pinch of Tajin.
- Serve immediately with sturdy tortilla chips for scooping.
