Ingredients
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 pound chicken breast, diced
- 1 cup asparagus, chopped
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the asparagus and cook for an additional 2-3 minutes.
- Add the orzo to the pot and pour in the chicken broth.
- Bring to a boil, then reduce heat and simmer for about 10 minutes or until the orzo is cooked.
- Stir in the heavy cream and cheese, mixing until the cheese is melted and creamy.
- Season with salt and pepper to taste.
