Ingredients

  • 1 lb (454 g) ground beef
  • 2 tbsp (30 ml) vegetable oil, divided
  • Salt and freshly ground black pepper
  • 1 cup (240 ml) chopped yellow onion
  • 1 cup (240 ml) chopped red bell pepper
  • 1 cup (240 ml) chopped green bell pepper
  • 2 cloves garlic, minced
  • 2 (411 g) cans petite diced tomatoes
  • 1 (425 g) can tomato sauce
  • 1 (411 g) can low-sodium beef broth
  • 2 1/2 tbsp (37 ml) chopped fresh parsley, plus more for garnish
  • 1/2 tsp (2.5 ml) dried basil*
  • 1/2 tsp (2.5 ml) dried oregano
  • 1 cup (200 g) uncooked long grain white or brown rice
  • Cheddar or mozzarella cheese, for serving (optional)


Instructions

  1. For a lighter soup, reduce the rice; for a thicker, more substantial soup, use all of it.
  2. If planning to save leftovers, avoid adding rice directly into the soup pot; instead, incorporate it into individual servings.
  3. Store the extra rice separately in the fridge to add the next day to prevent it from becoming mushy.
  4. In a large saucepan, heat 1 tablespoon of vegetable oil over medium heat. Once it’s hot, add the ground beef and season with salt and pepper. Cook, breaking it apart and stirring occasionally, until it’s browned. Drain the beef and transfer it to a plate lined with paper towels; set aside.
  5. Add the remaining tablespoon of vegetable oil to the pot, then add the chopped onion, red bell pepper, and green bell pepper. Sauté for 3 minutes, then add the minced garlic and cook for an additional 30 seconds.
  6. Add the petite diced tomatoes, tomato sauce, and beef broth to the pot, along with the parsley, basil, oregano, and the cooked beef. Season with salt and pepper to your taste. Bring the mixture to a gentle boil, then lower the heat to simmer. Cover and let it cook, stirring occasionally, for 30 minutes.
  7. Meanwhile, cook the rice according to the package instructions, then mix in your preferred amount of cooked rice into the soup once it’s done simmering.
