  • 1 onion, minced
  • 4 carrots, minced

  • 5 cup (120 ml) barley
  • 3 cans (10 oz or 283 g each) beef broth
  • 1 can (28 oz or 794 g) diced tomatoes
  • 2 cups (480 ml) water
  • 1 can (10.5 oz or 298 g) condensed tomato soup
  • 1 bay leaf
  • 1 tablespoon (15 ml) parsley
  • 1 teaspoon (5 ml) minced garlic
  • 5 teaspoon (3 ml) dried thyme
  • Ground black pepper, to taste


Instructions

  1. Collect all necessary ingredients.
  2. Place a large pot over medium-high heat and add the ground beef, breaking it apart as it cooks. Stir occasionally until it is uniformly browned and fully cooked, ensuring there is no pink remaining. Remove and discard any extra fat.
  3. Add the minced onion, carrots, celery, and barley to the pot. Pour in the beef broth, diced tomatoes, water, and tomato soup. Add the bay leaf, parsley, garlic, thyme, and a dash of black pepper for seasoning. Allow the mixture to reach a boil, then lower the heat and cover the pot.
  4. Let it gently cook for 2 hours, stirring often. Before serving, take out the bay leaf.
