Ingredients

  • 1 pound lean ground beef (450 g)
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 stalks celery, sliced
  • 2 (15 ounce (425 g)) cans dark red kidney beans, drained and rinsed
  • 1 (28 ounce (794 g)) can crushed tomatoes
  • 5 head cabbage, shredded
  • 2 cups beef broth (480 ml)
  • 2 cups water (480 ml)
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 2 cubes beef bouillon
  • 2 cloves garlic, minced
  • salt to taste

Instructions

  1. Break apart the lean ground beef into a large pot; cook and stir over medium-high heat until it turns brown and crumbly, approximately 5 minutes. Remove the excess fat. Add the chopped green bell pepper, chopped onion, and sliced celery. Stir and cook for another 5 minutes.
  2. Turn the heat to high. Add the drained kidney beans, crushed tomatoes, shredded cabbage, beef broth, water, Worcestershire sauce, beef bouillon cubes, and minced garlic; stir everything together. Allow it to reach a boil, then reduce the heat and let it simmer for 30 minutes.
  3. Serve the soup into bowls and add salt to your liking.

Notes

  • Consider using ground turkey or chicken instead of lean ground beef for a healthier twist.
  • Opt for low-sodium beef broth or homemade broth to enhance the soup’s flavor.
  • Customize the vegetable selection by incorporating carrots, zucchini, or any preferred veggies.
