  • 2 teaspoons kosher salt
  • 1 teaspoon basil, dried
  • 1 teaspoon oregano, dried
  • 2 cups carrot, diced into ½ inch pieces
  • 2 cups celery, diced into ½ inch pieces
  • 2 cups zucchini, diced into ½ inch pieces
  • ½ teaspoon red pepper flakes
  • 2 cups kidney beans, roughly 19 ounces or 540 milliliters
  • 1 can cherry tomatoes, roughly 13 ounces or 398 milliliters
  • 4 cups water
  • Parmesan cheese


Instructions

  1. Warm up the oil in a pot over medium heat, then toss in the diced onions and sauté them for 3-5 minutes until they become translucent.
  2. Add the ground beef to the pot, using a wooden spoon to break it into smaller pieces. Cook until the beef loses its pink color and begins to brown, which should take around 8-10 minutes.
