Description

Delicious and nutritious vegan meatballs made with mushrooms and lentils, perfect for any gathering.


Ingredients

  • 1 cup mushrooms, finely chopped
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup parsley, chopped
  • Olive oil for cooking


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the chopped mushrooms, cooked lentils, breadcrumbs, onion, garlic, soy sauce, oregano, salt, pepper, and parsley until well combined.
  3. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Drizzle with olive oil.
  5. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  6. Serve warm and enjoy!

Notes

For best results, remove excess moisture from the mushrooms before mixing. Experiment with herbs for added flavor.
