Delicious and nutritious vegan meatballs made with mushrooms and lentils, perfect for any gathering.
Ingredients
- 1 cup mushrooms, finely chopped
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup parsley, chopped
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the chopped mushrooms, cooked lentils, breadcrumbs, onion, garlic, soy sauce, oregano, salt, pepper, and parsley until well combined.
- Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 25-30 minutes, flipping halfway through, until golden brown.
- Serve warm and enjoy!
Notes
For best results, remove excess moisture from the mushrooms before mixing. Experiment with herbs for added flavor.
