Description

A delicious and nutritious tuna salad combined with creamy avocado, perfect for a quick lunch or light dinner.


Ingredients

  • 1 small ripe avocado
  • 1 (5-ounce) can of tuna in water
  • 1 tablespoon finely minced shallot
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup Italian parsley, chopped
  • Salt and pepper to taste


Instructions

  1. In a small mixing bowl, add the extra virgin olive oil, fresh lime juice, minced shallot, and a portion of the parsley. Stir to combine.
  2. Drain the tuna thoroughly and add it to the bowl with the dressing.
  3. Prepare the avocado by dicing or mashing it, then gently fold it into the tuna mixture.
  4. Add the remaining parsley and stir everything together. Adjust salt and pepper to taste.
