Ingredients
- 1 small ripe avocado
- 1 (5-ounce) can of tuna in water
- 1 tablespoon finely minced shallot
- 1 tablespoon fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1/4 cup Italian parsley, chopped
- Salt and pepper to taste
Instructions
- In a small mixing bowl, add the extra virgin olive oil, fresh lime juice, minced shallot, and a portion of the parsley. Stir to combine.
- Drain the tuna thoroughly and add it to the bowl with the dressing.
- Prepare the avocado by dicing or mashing it, then gently fold it into the tuna mixture.
- Add the remaining parsley and stir everything together. Adjust salt and pepper to taste.
