Ingredients
- 1 lb chicken breast, diced
- 2 tablespoons butter
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Stir in the garlic and cook for about 1 minute until fragrant.
- Add the cherry tomatoes and cook until they start to soften.
- Pour in the chicken broth and heavy cream, then add the Italian seasoning.
