Description

A wholesome and flavorful Tuscan Butter Chicken recipe, perfect for meal prep with lean protein and vibrant vegetables.


Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons butter
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving


Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Stir in the garlic and cook for about 1 minute until fragrant.
  4. Add the cherry tomatoes and cook until they start to soften.
  5. Pour in the chicken broth and heavy cream, then add the Italian seasoning.
  6. Bring to a simmer and cook for 5-7 minutes until the sauce thickens slightly.
  7. Stir in the fresh spinach and cook until wilted.
