Ingredients
- – 2 medium eggplants (500g)
- – 2 1/2 tbsp olive oil, divided (37.5ml)
- – 1/2 cup (120 ml) grated beef-friendly cheese alternative
- – 1/2 cup (120 ml) seasoned bread crumbs
- – 2 cups (480 ml) shredded beef-friendly cheese alternative
- – 2 cups (480 ml) tomato sauce
Instructions
- Set your oven to 375 degrees Fahrenheit.
- Cut the eggplants into 12 slices, each about half an inch thick. Arrange these slices on a wire rack and sprinkle them generously with salt. Place a large baking sheet on top to apply pressure. Allow them to rest for 30 minutes while the oven heats up. This step is optional but can help remove some moisture and reduce bitterness from the eggplants.
- Afterward, use paper towels to dry the eggplant slices thoroughly. Place them on a large baking tray. With a pastry brush, coat both sides with 2 tablespoons of olive oil. Season each side liberally with salt and pepper. Roast them in the oven for 20 minutes.
- Meanwhile, in a small bowl, mix together the grated cheese alternative, breadcrumbs, and the remaining 1/2 tablespoon of olive oil. Season with salt and pepper to your preference.
- Spread one cup of tomato sauce across the bottom of a 9×13-inch baking dish. Once the eggplant slices have roasted for 20 minutes, place six slices in the dish. Add a tablespoon of sauce on top of each slice. Distribute the cheese and breadcrumb mixture evenly over the eggplant slices. Sprinkle half of the shredded cheese alternative on top. Add another layer of eggplant slices. Pour the remaining tomato sauce over the top and finish with the remaining shredded cheese. Place the dish back in the oven and bake for another 20 minutes, or until the eggplant is tender and the cheese is melted and golden. Serve immediately.
