Description

A wholesome and savory casserole combining shredded chicken, black beans, corn, and vibrant vegetables, all baked together for a comforting meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup red bell pepper, diced
  • 1 cup onion, diced
  • 2 cups cooked brown rice
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, onion, brown rice, salsa, cumin, chili powder, salt, and pepper.
  3. Mix until all ingredients are evenly combined.
  4. Transfer the mixture into a greased casserole dish and spread evenly.
  5. If using, sprinkle cheese on top.
  6. Cover with foil and bake in the preheated oven for 25-30 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Let cool slightly before serving.

Notes

Consider adding jalapeños for extra spice, and use frozen corn directly without thawing for convenience.
