Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup red bell pepper, diced
- 1 cup onion, diced
- 2 cups cooked brown rice
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, onion, brown rice, salsa, cumin, chili powder, salt, and pepper.
- Mix until all ingredients are evenly combined.
- Transfer the mixture into a greased casserole dish and spread evenly.
- If using, sprinkle cheese on top.
- Cover with foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
Consider adding jalapeños for extra spice, and use frozen corn directly without thawing for convenience.
