Description

Ingredients

  • 1 cup of whole grain flour
  • 1 tablespoon of baking powder
  • 1 tablespoon of natural sweetener (like maple syrup or honey)
  • 1 cup of milk (dairy or non-dairy)
  • 1 large egg
  • 1/2 cup of fresh blueberries
  • Pinch of salt
  • Cooking oil or non-stick spray for the pan


Instructions

  1. In a mixing bowl, combine the whole grain flour, baking powder, and a pinch of salt.
  2. In another bowl, whisk together the milk, egg, and natural sweetener until smooth.
  3. Pour the wet mixture into the dry ingredients, stirring until just combined.
  4. Gently fold in the fresh blueberries, being careful not to mash them.
  5. Lightly grease the preheated skillet with oil or non-stick spray.
  6. Pour a quarter cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  8. Repeat with the remaining batter, ensuring the pan remains well-greased.
