- 1 large egg
- 1/2 cup of fresh blueberries
- Pinch of salt
- Cooking oil or non-stick spray for the pan
Instructions
- In a mixing bowl, combine the whole grain flour, baking powder, and a pinch of salt.
- In another bowl, whisk together the milk, egg, and natural sweetener until smooth.
- Pour the wet mixture into the dry ingredients, stirring until just combined.
- Gently fold in the fresh blueberries, being careful not to mash them.
- Lightly grease the preheated skillet with oil or non-stick spray.
- Pour a quarter cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, ensuring the pan remains well-greased.
