Description

A delightful and wholesome baked oatmeal dish that combines rolled oats, almond milk, blueberries, and maple syrup for a nourishing breakfast.


Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk (or any non-dairy milk)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup flaxseed meal (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, combine rolled oats, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt.
  3. Add the blueberries and optional nuts and flaxseed meal into the mixture, stirring gently to combine.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
