Ingredients
- – 1 ½ cups (160g) rolled oats
- – 1 ½ cups (375ml) milk
- – 1 large apple (200g)
- – 1 teaspoon (5 ml) vanilla essence
- – 1 cup (130g) flour
- – 2 teaspoons (10 ml) cinnamon
- – 3 teaspoons (15 ml) baking powder
- – 80g brown sugar (1/3 cup), any granulated sugar can be used
- – 1/2 cup mild olive oil (approximately 120g, can be substituted for 113g melted butter)
- – 1/4 cup (60 ml) apple sauce (or substitute with one egg)
Instructions
- Set your oven to 180°C (around 350°F) to warm up.
- Get a 12-cup muffin pan ready by either greasing it or lining it with paper liners.
- Shred the apple. Combine the rolled oats, shredded apple, and vanilla with the milk and let them soak. It’s ideal to leave them for at least 20 minutes, but letting them sit overnight works too. This soaking process helps the muffins turn out soft and light.
- In a large bowl, combine the flour, baking powder, cinnamon, and brown sugar. Use a whisk or a fork to mix these dry ingredients together.
- Stir the apple sauce and olive oil into the soaked oat mixture until everything is well combined.
- Gently fold the wet mixture into the dry ingredients, stirring just until they are combined.
- Spoon the batter evenly into the muffin pan.
- Place in the oven and cook for 25-30 minutes, until the muffins are golden and spring back when pressed lightly in the center. Let them cool in the pan for 5 minutes before taking them out.
Notes
- Try using melted butter for a richer flavor, instead of olive oil.
- Consider substituting an egg for apple sauce for a more moist texture.
