These Healthy Air Fryer Churro Bites are a guilt-free version of the classic treat, featuring a crunchy exterior and soft interior, made with almond flour, coconut flour, and erythritol.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or sugar substitute
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 2 tablespoons melted coconut oil
- 1 tablespoon vanilla extract
- Cooking spray
- Additional erythritol and cinnamon for coating
Instructions
- Mix the almond flour, coconut flour, erythritol or sugar substitute, baking powder, cinnamon, and salt in a bowl.
- Whisk together the eggs, unsweetened applesauce, melted coconut oil, and vanilla extract in another bowl.
- Combine the wet and dry ingredients until just mixed.
- Preheat the air fryer to 350°F (175°C) and lightly coat the basket with cooking spray.
- Use a small scoop to form the dough into bite-sized balls and place them in the air fryer basket.
- Cook for 8-10 minutes or until they turn golden brown, shaking the basket halfway through.
- Mix additional erythritol and cinnamon in a separate bowl.
- Roll the churro bites in the erythritol-cinnamon mixture once done.
- Serve warm and enjoy!
Notes
To maintain crispiness, reheat in the air fryer for a few minutes if stored. Experiment with additional spices for flavor.
