Description

These Healthy Air Fryer Churro Bites are a guilt-free version of the classic treat, featuring a crunchy exterior and soft interior, made with almond flour, coconut flour, and erythritol.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or sugar substitute
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons melted coconut oil
  • 1 tablespoon vanilla extract
  • Cooking spray
  • Additional erythritol and cinnamon for coating


Instructions

  1. Mix the almond flour, coconut flour, erythritol or sugar substitute, baking powder, cinnamon, and salt in a bowl.
  2. Whisk together the eggs, unsweetened applesauce, melted coconut oil, and vanilla extract in another bowl.
  3. Combine the wet and dry ingredients until just mixed.
  4. Preheat the air fryer to 350°F (175°C) and lightly coat the basket with cooking spray.
  5. Use a small scoop to form the dough into bite-sized balls and place them in the air fryer basket.
  6. Cook for 8-10 minutes or until they turn golden brown, shaking the basket halfway through.
  7. Mix additional erythritol and cinnamon in a separate bowl.
  8. Roll the churro bites in the erythritol-cinnamon mixture once done.
  9. Serve warm and enjoy!

Notes

To maintain crispiness, reheat in the air fryer for a few minutes if stored. Experiment with additional spices for flavor.
