Description

Delicious and healthy breakfast bars that combine oats, peanut butter, and chocolate chips for a nutritious snack.


Ingredients

  • 1 cup rolled oats (uncooked)
  • 1/4 cup flour (wheat, almond, coconut, or gluten-free blend)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp coconut oil
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter (crunchy or creamy)
  • 1/2 tsp vanilla
  • 1/3 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F and line an 8×8 pan with parchment paper.
  2. In a medium bowl, mix together the oats, flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In a microwave-safe bowl, melt the coconut oil by microwaving it for 15-20 seconds. Beat in the eggs.
  4. Add the maple syrup, peanut butter, and vanilla to the egg mixture. Mix until well combined.
  5. Pour the wet ingredients into the dry mixture and stir until just combined.
  6. Fold in the chocolate chips using a rubber spatula.
  7. Spread the mixture evenly in the prepared pan.
  8. Bake for 20-25 minutes or until the bars turn golden brown.
  9. Let the bars cool before cutting them into portions.
  10. Store in an airtight container on the counter for up to 3-5 days.

Consider using whole oats for a heartier texture and experiment with different types of flour for unique flavors.
