Delicious and healthy breakfast bars that combine oats, peanut butter, and chocolate chips for a nutritious snack.
Ingredients
- 1 cup rolled oats (uncooked)
- 1/4 cup flour (wheat, almond, coconut, or gluten-free blend)
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp coconut oil
- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup peanut butter (crunchy or creamy)
- 1/2 tsp vanilla
- 1/3 cup chocolate chips
Instructions
- Preheat the oven to 350°F and line an 8×8 pan with parchment paper.
- In a medium bowl, mix together the oats, flour, cinnamon, baking powder, baking soda, and salt. Set aside.
- In a microwave-safe bowl, melt the coconut oil by microwaving it for 15-20 seconds. Beat in the eggs.
- Add the maple syrup, peanut butter, and vanilla to the egg mixture. Mix until well combined.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the chocolate chips using a rubber spatula.
- Spread the mixture evenly in the prepared pan.
- Bake for 20-25 minutes or until the bars turn golden brown.
- Let the bars cool before cutting them into portions.
- Store in an airtight container on the counter for up to 3-5 days.
Notes
Consider using whole oats for a heartier texture and experiment with different types of flour for unique flavors.
