Ingredients
- 4 medium potatoes (about 800g)
- 2 Tablespoons (30ml) vegetable oil
- 8 to 12 thin slices cheddar cheese, cut into 1-inch squares
- 1/3 cup (30g) shredded vegan cheese
- 1 Tablespoon (15ml) chopped fresh chives
Instructions
- Warm up your oven to 450°F and cover a baking tray with foil.
- Position each potato between two wooden spoons and slice across at 1/8-inch intervals, taking care not to cut all the way through.
- Arrange the potatoes on the prepared tray and coat them with vegetable oil. Add salt and pepper to taste.
- Cook the potatoes for 55 to 60 minutes until they are soft. Take them out of the oven and gently slot the cheddar cheese pieces into each slice. Sprinkle the shredded vegan cheese on top, then return them to the oven to bake until the cheese melts, roughly 3 minutes.
- Take the potatoes out of the oven, garnish with fresh chives, and serve right away.
- The amount of cheese you choose to use will vary based on whether you fill each slice or every other slice with cheese.
