Description

A comforting one-pot meal made with ground beef, fresh vegetables, and savory broth, perfect for chilly evenings.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup potatoes, diced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup green beans, cut into pieces
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic; cook until beef is browned.
  2. Stir in carrots and celery; cook for another 5 minutes.
  3. Add beef broth, diced tomatoes, potatoes, Worcestershire sauce, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes until the vegetables are tender.
  5. Stir in the green beans and cook for an additional 5 minutes.
  6. Adjust seasoning if necessary and serve hot.

Notes

Serve with crusty bread or a light salad. This soup makes great leftovers and flavors improve when reheated.
