Ingredients

  • 4 cups (946 ml) beef cubed
  • 1 beef bone
  • 2 cups (473 ml) dry Great Northern beans or Navy beans
  • 2 cups (473 ml) celery chopped
  • 2 cups (473 ml) carrots chopped
  • 1 large onion finely chopped
  • 3 cloves garlic finely minced
  • 4 sprigs fresh thyme or 2 teaspoons (10 ml) dry
  • 1/4 cup (60 ml) fresh parsley or 1 tablespoon dry
  • 1/2 teaspoon (3 ml) fresh ground pepper
  • 8-9 cups (1892-2126 ml) beef stock or beef broth
  • 1 tablespoon (15 ml) vegetable oil for sautéing vegetables
  • salt to taste


Instructions

  1. Soak the dried beans in cold water for 8-10 hours or overnight, then drain and rinse them, removing any that are damaged or discolored.
  2. In a large Dutch oven, warm the oil and cook the celery, carrots, onions, and garlic until they become soft.
  3. Pour in the beef stock, add the beef bone, and include the beef cubes.
  4. Incorporate the beans, parsley, thyme, and pepper into the mixture.
  5. Allow it to reach a boil, then lower the heat to a gentle simmer. Cover and cook slowly for 2-3 hours until the beans are soft.
  6. Cut any large beef pieces into smaller chunks before serving.
  7. Near the end of cooking, take out about 1 cup of the soup, blend it until smooth with an immersion blender, and mix it back into the pot.

  • Consider using homemade beef stock for a richer flavor.
  • Enhance the aroma with a bay leaf or dried rosemary.
